
Our four hundred trees give around six hundred litres in a good year. We pick by hand in the last days of October, with nets spread under each tree and small plastic rakes.
From tree to mill in a day
The olives go to the mill within a day, where they are washed, crushed and spun. What comes out is bright green and so peppery it catches your throat.

New oil should make you cough. If it doesn’t, it isn’t new.
Guests who stay in November go home with a bottle. It is, we think, the best souvenir in Tuscany.
